Recipe: Egg & Mackerel Muffins
I just wanted to share a quick, easy and healthy recipe which I often make - egg and mackerel muffins. High in protein and good fats to help you feel fuller for longer. Recipe as follows:
Whisk 6 eggs and 2 tins of mackerel fillets (in brine). You can replace the mackerel with any tinned fish such as tuna. Add in herbs and seasoning - I used mixed Italian herbs and salt and pepper. Pour mixture into a silicon muffin tray. Any tin can be used but if it is made from silicon it's a lot easier to get them out. I like to top them with a slice of tomato. Cook in the oven for approx. 20 mins or until cooked through. Enjoy!
